Big bowl

Pastry mat (optional, to keep counter clean while rolling)
2 clean dish towels

Big pot for boiling
Ingredients
2 cups of all-purpose flour
3 large eggs
Put the flour into a large bowl or onto a clean counter. Make a large well in the middle, and crack the eggs into the well. Swirl them with a finger to slightly scramble them.
Begin to make the dough by folding flour from the edges into the middle. Knead the mixture until it forms a dough. This will take several minutes. It will look shaggy for a while, but add a few drops of water at a time (seriously, just a few drops!) if the dough is too dry to hold together. After the dough forms, knead for 2-3 minutes by smashing it together rather than folding.
Put a large pot of water on the stove to boil. Salt the water.
Wrap in plastic and let rest in the fridge for 30 minutes (up to 2 hours). Sprinkle a pastry mat or counter with flour. Break off 1/4 of the dough and roll flat, leaving the rest wrapped in the plastic. Add flour to the top or bottom of the dough as needed to keep it from sticking to the rolling pin. Roll it as thin as possible. Place the flat dough on a clean towel and cover with a damp towel. Repeat with the rest of the dough.
Fold each piece over a few times, and slice into noodles, roughly 1/8" to 1/4" wide. Unroll each noodle and place under the damp towel.
Put the oodles of noodles into the boiling water for 6-8 minutes, once they are al dente. Drain and top with the sauce of your choice!
Bryans Sauce
Slice white onions and sautee in a tablespoon of olive oil on medium heat for 5 minutes. As they become translucent, add at least 3 cloves of garlic and a large can of crushed tomatoes to the pan. Fill up 1/3 of the can with water and add to the pan. Lower heat and simmer until reduced, around 25-30 minutes. Season with salt, pepper, and a generous amount of fresh basil. Optional additions during the last 15 minutes of cooking: mushrooms, bell pepper, or ground turkey.
