Eric and Jeff make Fried Rice
Ingredients
White rice (3 cups)
Eggs (4 large)
Soy sauce (to taste)
Frozen veggies (generous amount)
Chicken breast (2-3 chicken breasts)
Pineapple (2 cups)
Salt/pepper/garlic powder (to taste)
Sriracha (to taste)
Recipe:
Start rice cooker (use 3 cups of rice for two people who eat a lot)
Scramble 4 Eggs in a bowl - season with salt and pepper as you desire
Season Chicken with salt, pepper, and garlic powder
Cut chicken breast into bite-size pieces
Heat pan to low heat
Oil pan and cook the scramble eggs until they are 70-80% done - they should still be a little runny at this point
Set cooked eggs into separate bowl
Turn up stove to medium-high heat
Oil pan and cook chicken until pink is gone
Stir frozen vegetables into the pan
Optional step: drain the canned pineapple and stir pineapple into the pan
Add cooked riced into pan
Add soy sauce and sriracha to your discretion (integrate other seasonings here at your discretion)
Continuously stir until even distribution
Reintegrate/stir in the eggs and allow them to cook the rest of the way through
Serve while piping hot!
