Eric and Jeff make Fried Rice

Ingredients

  • White rice (3 cups)

  • Eggs (4 large)

  • Soy sauce (to taste)

  • Frozen veggies (generous amount)

  • Chicken breast (2-3 chicken breasts)

  • Pineapple (2 cups)

  • Salt/pepper/garlic powder (to taste)

  • Sriracha (to taste)

Recipe:

  • Start rice cooker (use 3 cups of rice for two people who eat a lot)

  • Scramble 4 Eggs in a bowl - season with salt and pepper as you desire 

  • Season Chicken with salt, pepper, and garlic powder

  • Cut chicken breast into bite-size pieces

  • Heat pan to low heat

  • Oil pan and cook the scramble eggs until they are 70-80% done - they should still be a little runny at this point

  • Set cooked eggs into separate bowl

  • Turn up stove to medium-high heat

  • Oil pan and cook chicken until pink is gone

  • Stir frozen vegetables into the pan

  • Optional step: drain the canned pineapple and stir pineapple into the pan

  • Add cooked riced into pan

  • Add soy sauce and sriracha to your discretion (integrate other seasonings here at your discretion) 

  • Continuously stir until even distribution

  • Reintegrate/stir in the eggs and allow them to cook the rest of the way through

  • Serve while piping hot!
