Raul Recipe: One Pan Shrimp Fajitas

Ingredients (Spice measurements are on the conservative side of life, feel free to use more)

  • 6 Tortillas

  • 3 Bell peppers

  • 1/2 of an onion (I prefer red onion)

  • 1 lb of shrimp (fresh or frozen work fine; if frozen, thaw before)

  • 1 Tbsp Olive oil

  • 1 Tsp salt

  • 1/2 Tsp pepper

  • 1 Tsp Garlic Powder

  • 1 Tsp Cumin

  • 1 Lime (Juiced)

Instructions

  • If using frozen shrimp, thaw before cooking

  • Some prefer to cook the shrimp with skin and tails attached, I prefer to remove all of it before cooking

  • Preheat your oven to 400 degrees

  • Wrap the tortillas in foil and place in the corner on a large baking tray 

  • Slice your bell peppers and onions into strips and place them on the baking sheet

  • Place your shrimp on top of the veggies. Onto the ingredients, drizzle the oil, and sprinkle the salt, pepper, garlic powder, cumin, and lime juice

  • Toss the ingredients with a pair of tongs until they are all evenly coated

  • Put your baking sheet into the oven for 10 - 12 minutes

  • Remove from oven and place ingredients inside your warm tortillas

  • Serve with salsita (your preference), guacamole, and plenty of cilantro

  • ProTip: these pair well with your favorite margarita (I could also prep margs for this btw)

Spencer Recipe: Chicken Fajitas

Fajitas Ingredients (all spices are to taste)

  • Tortillas

  • 2 Bell Peppers

  • 1/2 onion (I prefer red onion)

  • 1 lb of chicken breasts

  • 1 Tbsp Olive oil

  • Salt to taste

  • Pepper to taste

  • Fresh Garlic to taste

  • Cumin to taste

  • Chili Powder to taste

  • Paprika to taste

  • 2-4 Limes depending on juice needs

Salsa Ingredients

  • 2 tomatoes

  • 1/2 a red onion

  • Jalapeño

  • Lime

  • Garlic

  • Cilantro

Instructions

  • Pre-marinade chicken breasts with your choice of spices. The spices above are what I use, but everything is optional.

  • Slice your bell peppers and onions into strips and place aside

  • In a preheated pan at medium heat, add olive oil to the pan, and then add pre-marinated chicken.

  • cook your chicken breast on one side until it is easily released from the pan, and then flip to the other side.

  • When the chicken is cooked through remove the chicken from the pan, and add the fajita vegetables and cook for a few minutes resisting the urge from moving things around too much so that a good amount of color occurs.

  • Slice the chicken into strips, and add back to the pan and combine vegetables and chicken until entirely cooked.

  • Serve with salsa (your preference), I made fresh pico which was just finely diced ingredients.

  • serve with warm tortillas
